Llevar una taza y media de agua con sal a ebullición, apagar el fuego. Agregar el couscous revolver y tapar hasta que el líquido se haya consumido (5 a 6 minutos. Colar en colador y bajo el agua fría)

Pasar a un bowl, agregar el aceite de oliva. Reservar.

Acomodar en una ensaladera la rúcula fresca bien limpia, el couscous, la cebolla, el queso y los tomatitos deshidratados (antes rehidratar remojándolos en agua tibia por 20 minutos).
Paso 4
Agregar las aceitunas y pistachos. Colocar el aderezo antes de servir.
